Bake it! ... Eat more fruit!
When spring is about to appear, I always think about fruit, probably because the fruit trees are blooming. I always want to eat more fruit. My kitchen is filled with bowls of carefully arranged fruit, to look at , and mostly to remind me to EAT MORE FRUIT!
When it is the last days of winter, I always like to bake one last homey meal, and more likely than not I will finish it off with a fruity dessert.
I love baking fruit, weather with honey or brown sugar, over vanilla ice cream, or with a cheese course it is the prefect wintery finish to a chilly winter evening.
Baked Fruit with Balsamic.
Just about any fruit will do. I love apples, figs, pears, plums and even berries can be tossed into the mix.
Pre-heat the oven to 375
3 apples, 3 pears,(6 figs if available) 12 strawberries
Cut and core apples and pears in half, cut figs in half ,12 whole strawberries
arrange cut fruit into an oven proof dish, sprinkle 1/4 cup brown sugar +
3 tablespoons butter cut into small pieces + 1/2 cup apple juice
add a pinch of sea salt.
Bake for 1 hour, or until soft and bubbling.
Remove from the oven and splash with 3 tablespoons aged balsamic vinegar.
Serve immediately over vanilla ice cream, or scooped into a bowl, with a cheese course.
Serves 6
