Prepping the Veggie Garden for Spring
Much like organizing my home, I like to organize my garden for spring,(my favorite time of the year) I love to browse on the internet, for new seed resources.
We eat out of the garden all summer long, and have been for years. With these challenging economic times planting a garden is dollar wise and can be a very fun family activity. Seeds are very well priced and the yield is certainly worth the expense.
Every year my children would till the garden for me as my Mother's day gift.
We would pick and plant the rows together.
Early summer the zucchini flowers would appear. A family favorite are stuffed zucchini flowers, a recipe I learned at cooking school in Revello, Italy.
be careful not to pick all the flowers, or you will have no zucchinis for the summer.
I have done this in the past...and regretted it. But my family loves the flowers so much it is a hard decision not to keep making them until they are gone.
Here is Mama Agata's Recipe:
Zucchini Flowers stuffed with Smoked Provolone
Stuff 12 Flowers with smoked provolone cheese cut into 1 inch cubes
Prepare batter for dipping stuffed flowers into (like pancake batter)
4-5 tbsp flour
1 tspn salt
water- drop by drop ( until the consistency of pancake batter)
3 eggs
1-2 tbsp parmesan cheese
1 tspn white vinegar
Heat sunflower oil in a frying pan
dip stuffed flowers and fry until golden brown, drain in paper towels, serve immediately- serves 4
buy your seeds, plant them with the family, it's fun and rewarding + nourishing.
