Tagliata With Radicchio And Parmesan
This is one of our Chef’s recipes. As you know Chef Leo has worked in the La Fortezza kitchen for 6 years. He rarely shares his recipes so this is a treat. It’s a simple Tuscan recipe. Delicious and uses all my favorite ingredients. Balsamic vinegar, and Parmesan cheese, and steak. Enjoy. Check out us making in on Youtube. It’s a really funny video.
Serves 4-6
*Preheat the oven to 350 degrees F
3 pounds sirloin or other cut of steak, 1½ to 2 inches thick, at room temperature
1 cup shredded radicchio
3 tablespoons olive oil
1 tablespoon salt
1 ounce Parmesan cheese, shaved with a vegetable peeler
2 tablespoons olive oil for searing steak
3 tablespoons of Borgo del Balsamico vinegar
Cut the radicchio into wedges place on a sheet pan. Sprinkle with salt and drizzle olive oil over the wedges place into a 350 degree oven for 10 minutes, until wilted and a bit browned. Place the wedges on a platter. Make the steak.
Season the steak with salt and pepper to taste. Place the steak in an iron skillet steak and sear for 3 minutes on each side. Allow to rest on a carving board for 10 minutes. Slice thinly, diagonally against the grain, and arrange on top of the radicchio top with the shaved Parmesan. Pour pan Top with shredded Parmesan and a splash of balsamic vinegar, and serve.
