The total cost of this workshop is $2,850 for double rooms, and $3,275 for single rooms. A deposit of $1,500 is required to secure your double room registration, and a deposit of $1,775 is required to secure your single room registration. The remaining balance ($1,350 for double rooms and $1,500 for single rooms) is due October 1, 2017. By purchasing this workshop, you agree to pay the remaining balance when prompted to do so. No refunds are available after booking.

This premiere olive-centric workshop includes elements of the classic workshop we have offered over the years, but with a unique twist: it’s all about olives! The workshop takes place during olive harvest season. The AJ style team photographer Emily Followill will be your photography instructor. Emily will teach you the basics of your camera and for more advanced photographers, you can dig into technical one-on-ones with Emily.
Annette will be teaching styling in the kitchen and in the studio, with special guest, acclaimed chef Alisa Barry of Bella Cucina who will be in the kitchen teaching cooking lessons. If you have a passion for all things Italian including Italian food, this workshop is for you. Annette and Alisa are a match made in olive oil heaven. If you’re obsessed with olives and olive oil, this is your time to make the commitment and come cook, style and photograph with them.
Here’s what you’ll be doing for 4 days of olive oil fun: You will partake in foodie excursions. We will visit an organic olive grove and harvest olives. The group will observe and photograph while the olives are pressed and tasting fresh press olive oil a special treat. You’ll enjoy a picnic in the olive groves. Alisa will be teaching cooking lessons with local olive oil including both savory and sweet recipes. Fall is a beautiful time of year to enjoy the seasonal bounty, like olives, truffles, persimmons, and even wine tasting.
You’ll have a free day to explore even more of Italy which includes your choice of fall food festival excursions.
Post-production lessons in work flow will be offered in the onsite photo studio for those interested.

Fee includes breakfast, all lunches (excluding your free day), some dinners, all instruction, and group excursions. Accommodations are also included. NOTE* Airfare is not included and is the responsibility of the student. NOTE* Students are responsible for their transportation to the B&B.
Annette Joseph, acclaimed food and prop stylist, along with Emily Followill food, interiors, and lifestyle photographer, will be teaching basics intermediate and advanced styling and photography techniques while acclaimed chef, Alisa Barry will teach Italian cooking and techniques while preparing olive-centric menus with both sweet and savory recipes.
The Setting – The Fortress
The Fortress, the Josephs’ Tuscan home and workshop location, is nestled in the heart of Northern Tuscany in a region known as the Lunigiana. The medieval stone compound sits on 27 acres, and on the grounds are Roman ruins, the La Prugna river and their vineyard. The Fortress has a breathtaking view of the Apennine mountains, the marble-topped Apuane Alps and the valley below. The property is surrounded by olive groves, chestnut trees, fruit orchards and an their own organic garden. The Fortress was a medieval defensive tower from the 12th century in a region that had over 120 castles and kingdoms to protect. You will also find 3 outbuildings, a massive terrace, and a private living quarters. Enjoy wandering the grounds with your camera in hand capturing the Italian country life during your stay.
Lodging: You will be staying at a nearby monastery that's been converted into a B&B, La Concia in the Tuscan countryside.

1:30 pm - Arrive at The B&B- light lunch/snack will be offered
2:30- 6:30 pm - Relax, nap, unpack
6:30 pm - Meet and Greet Aperitivo on the terrace with cocktails and nibbles here's a pin .
7:30 pm - Welcome dinner on the terrace to follow
Thursday, November 9th

10:00 - noon – Cooking lunch in the kitchen with Alisa

1:00 - 4:00 pm – Lectures on styling food and your camera by Annette and Emily
4:00 - 5:00 - Free time to work with Emily or Annette one on one

Friday, November 10th
9:00 - 10:00 am – Breakfast and the B&B
10:00 - noon – Olive Harvest on the grounds of La Concia, your B&B
12:00 - 1:30 pm – Picnic in the olive grove (weather permitting)
2:00 - 5:00 pm – Cooking dinner in the kitchen with Alisa back at The Fortress
5:00 - 6:00 – Free time at the Fortress, walk to the vineyard or walk the property with camera and or wine in hand with Emily
6:30 - Aperitivo
7:30 - Group dinner
Saturday, November 11th
9:00 - 10:00 am – Breakfast at the B&B Excursion day note breakfast might be earlier.
10:00- 11:30 - Editorial Photography Excursion- Olive pressing, oil tasting. ( we will provide transportation)
12:00- 2:30 Wine tasting at a local winery and nibbles, then back to the B&B for a little rest.
6:30 – Aperitivo at the Fortress
7:30- Group dinner at the Fortress
Sunday, November 12th Free Day
Free Day - Please go to the Free Day Activities tab on the site to get a full description of activities in the area. We can help with any arrangements and are happy to transport you to the train station in Aulla if you do not have your own car. Please take a minute to decide on your activity. Our experience has been that planning your free day in advance makes it less stressful than planning the day before. We are happy to answer any questions about free day activities. You are welcome to lounge at the B&B read a book, and relax as well if you wish. We just want to make sure your free day is exactly as you would like it to be.
