Blackcurrant Mojito Fizz

I am so excited to have Will from the wildly popular blog, Bright.Bazaar, dazzling us with his cocktail skills this week. I was thrilled to get to work with Will last summer and it's a pleasure to now call him a friend (he even came to visit me this summer). He's a gem! I knew he'd come up with something fabulous. I've been following Annette's work for a number of years now and I was lucky enough to meet her last summer when I went to stay with her in Italy. Well, a year later and we were toasting in her stunning Italian home once again! So, I thought I'd share with you all one of my favourite summer cocktails - Blackcurrant Mojito Fizz. This cocktail is perfect for barmy summer evenings, crisp yet refreshing, it's fruity notes and light fizz make for a great staple drink. Cheers, folks!
Blackcurrant Mojito FizzRecipe adapted from Waitrose Cocktail Lover's Handbook
  • 12 fresh mint leaves
  • 1 shot lime juice
  • 1 tsp caster sugar
  • crushed ice
  • 1 shot rum
  • 1 shot blackcurrant liqueur
  • club soda
  • sprig of mint

    Gently muddle the mint leaves, lime juice and sugar in the bottom of the glass. Half fill the glass with crushed ice and pour over the rum and liqueur and lightly stir.
